Raw Wilted Kale Salad

I'm always looking for more ways to include kale in our diet. Kale is very easy to grow and I grow it in my container garden right outside my apartment.

Here is my recipe for raw wilted kale salad:

Ingredients --

  • kale (washed and chopped into small pieces)
  • sweet onion (chopped)
  • Olive Oil
  • Sea Salt
  • Walnuts (roasted in the over)
  • Dill (chopped)
  • Balsamic Vinegar

  1. Roast walnut: Toss with olive oil and cook in a pan over medium heat for just a few minutes until they turn brown and are roasted. Be careful, they burn very easily.

  2. Place the kale in a large bowl and sprinkle with sea salt. Work the salt into the kale with your hands, by mixing really well. Let sit for 20-30 minutes, which allows the kale to wilt. Add balsamic vinegar, olive oil and chopped dill to taste.

You can use other herbs besides dill. I just really love the taste of fresh dill and it grows really well in my garden so I always have plenty of it.

Serve and enjoy!

Thanks a lot, Amelia. I had been thinking about making some new salads and was surfing through recipes. Most of them are difficult to prepare as ingredients are not so easy to get. But this one was something I haven’t heard about and the ingredients are locally available.
